Chèvre is the french word for goat. It is also the word we often use for a cheese made from goat’s milk. Fresh chèvre is cheese that has just been made and not yet cured. I will have to do some research on the process of making it, but it is a lot like what is known as farmer’s cheese or an italian ricotta though much smoother. It doesn’t have the tart or earthy flavor that is distinctive of goat’s cheeses.
We ate it with fresh bread and tomatoes with salt. Yum!
