Tomme is a type of cheese not a specific cheese. There are many different “tomme” or “tome” cheeses. This type of cheese is produced mainly in the French Alps or Switzerland. Our purchase of Tome was made from a market stall vendor. I had doubts about buying from the vendor (too aggressive) but went ahead anyway. The price seemed exorbitant and in retrospect and comparing to prices elsewhere it was. They charged 60 euros a kilo or roughly $30/lb. I can’t even tell you which “tome” it was except that it was chevre (goat’s cheese) since when I asked (after having paid) the vendor rudely didn’t bother to answer. Lesson learned.
