The Selles sur Cher type of cheese is in the shape of a thick disc with bevelled sides. It has a delicious, subtle and creamy taste. It is made from raw goat’s milk and has a light wood charcoal ash covering which looks bluish/black. The cheese is made in the Loire Valley.
Since 1975, Selles-sur-Cher is protected by an Appellation d’Origine Contrôlée (AOC) and also has the Appellation d’Origine Protégée (AOP, the European Union designation). These designations ensure that it has been produced in a particular geographical area in a manner consistent with the appellation’s standards.
I found it a very pleasant cheese with a really nice creamy texture but it was a little too mild for my taste.
